Ingredients:
6 medium sized red-skinned sweet potatoes
1/2 cup (packed) brown sugar
1/4 cup (1/2 stick)butter,room temperature
1 tbs lemon juice
2 teaspoons grated orange peel
3/4 teaspoons ground cinnamon
3/4 teaspoons ground all spice
3/4 teaspoon ground nutmeg
Directions:
1. Position the rack in the center of the oven,preheat to 400 degrrees. Pierce sweet potatoes in several places with a fork, place on aluminum foiled covered flat pan. Bake until tender, when it is pierced with a fork about 55 minutes cool slightly.
2. Cut the sweet potatoes in half. Scoop out the pulp into a large bowl, discard the peel. Add ground cinnamon,all spice,lemon juice,peel,nutmeg.
3. Use an electric mixer, beat until the mixture is smooth.
