YAM SQUARES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Mendez Estate in Arlington, Texas in 1986. This are very good. I make them during the holiday season every year and they are always a big hit.
Ingredients:
1 cup flour
1 stick oleo
1/2 cup chopped pecans
filling
1 large instant vanilla pudding
1 cup milk
1 can mashed yams
1 teaspoon pumpkin pie spice
1 teaspoon cinnamon
1 teaspoon vanilla
cool whip
Directions:
1. Melt oleo and mix flour and pecans all together.
2. Press in a long dish and bake at 350 for 12 minutes.
3. Cool completely.
4. Whip all filling ingredients together except Cool Whip and pour over cool crust.
5. Top with Cool Whip.
6. Sprinkle crushed pecans on top.
