Yam Souffle The Yam In This Not Sweet Potato

Light texture but must be eaten fresh out of the oven. When cold texture becomes compacted
Ingredients:
1/2 lbs cooked yam (this is not what the americans sweet potato)
1/2 med onion grated
2 oz. marg
1/2 cups milk
2 eggs separated
2 oz. grated cheese
salt & pepper to taste
Directions:
1. When hot, mash the yam until smooth.
2. Melt the margarine and add to the hot milk
3. Add yam and mix thoroughly
4. Stir in the cheese, grated onion, salt & pepper to taste
5. Cook slowly for 2 to 3 mins.
6. Remove from flame and add 2 well beaten yolks
7. Lastly, fold in 2 stiffly beaten egg whites
8. Place mixture in a well greased suffle dish
9. Bake in a moderate oven (gas 4) until souffle has risen and the top is brown
