YAM CAKES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Anderson Estate in Frisco Texas in 1994. Ingredients:
1-1/4 cups cooked yams mashed |
2 cups all purpose flour |
2 teaspoons granulated sugar |
1 teaspoon salt |
3 teaspoons double acting baking powder |
1/2 cup vegetable oil |
1/2 cup milk |
Directions:
1. Preheat oven to 425 then place yams into large bowl and set aside. 2. In another bowl mix flour, sugar, salt and baking powder. 3. Combine oil and milk then pour over yams and blend well with a fork. 4. Add flour mixture and mix lightly with the fork. 5. Turn out on lightly floured surface and knead 1 minute. 6. On a floured surface roll out pastry to desired thickness and cut with floured biscuit cutter. 7. Lightly grease and flour a baking sheet then place rounds on baking sheet and bake 20 minutes. |
