A very common dish here in Japan. My family love it. Before I always use instant soba sauce,but now I found out that a homemade soba sauce is way more delicious than the instant one...enjoy!
Ingredients:
220 grams of soba noodles (the cooked one,not the dried)
100 grams of pork in yakiniku slices (bacon slice)
2 cloves of garlic (grated)
1 tsp of ginger (grated)
1 sweet onion ( thinly sliced)
1 carrot ( peeled and cut thinly )
1/4 - 1/2 cabbage (cut for soba size)
1/4 cup of light soy sauce (like kikkoman)
2 tbsp of sake (japanese rice wine) or any cooking wine
2 tbsp of mirin ( sweet rice wine)
1 packet of hon dashi ( ajinomoto hon dashi - the pink one )
2 tbsp of sugar
3 tbsp of vegetable cooking oil
toasted sesame seeds ( the brown ones. if you buy fresh or uncooked sesame seeds-they are white in color.you have to toast them in non-stick pan on stove.so,buy the toasted ones to save time :p )
Directions:
1. If you bought dried soba noodles. Cook them in boiling water until soft but not mushy. Drain and transfer to a bowl of iced water to refresh, then drain once more.
2. If you bought the cooked soba noodles. Just set them aside.
3. Heat the cooking oil in a wok. Add the ginger, garlic and onions.Stir fry.
4. Add the bacon slices and carrots. Stir fry.
5. Add the cabbage.
6. Pour in the soy sauce, sake and mirin.
7. Add the Hon Dashi and sugar.
8. Bring to boil.
9. Stir in the cooked soba noodles and cook for 30 seconds or until the soba absorbs the sauce.
10. When serving, sprinkle sesame seeds for a more delicious taste.
