Great meal for the throw together night. I love ONE-POT meals, and this is my own creation... whoo hoo! ENJOY... and make alterations to satisfy your own tastes!
Ingredients:
1 lb ground beef
1 medium onion, chopped
1 medium green pepper, chopped
1 (14 1/2 ounce) can diced tomatoes
1 (7 1/4 ounce) package macaroni & cheese dinner mix
1 garlic clove, minced or crushed
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon italian seasoning
1 teaspoon salt
1 cup cheese, shredded (cheddar, monteray jack, blend, whatever!)
Directions:
1. In large pot (Dutch oven), brown beef and onion, drain excess fat.
2. Add green pepper, tomatoes (and juices from can), and add 1-1/2 CANS of water. Add macaroni from dinner and the cheese mix package. Add all seasonings and adjust to your own tastes.
3. Cover and simmer for 15 minutes Stir, and add water IF necessary. Cover, simmer for another 10-15 mins, until macaroni is done. Take off heat and stir in shredded cheese. Serve.
