From the Weight Watchers Cookbook - Mom's Original recipe calls for 1 cup peppers, I used 2 cups fine and it was so much better! :) Also called for olive oil instead of canola.
Ingredients:
1 cup onions
1 cup green peppers
1 cup red peppers
1 clove minced garlic
1 tbsp. canola oil
4 oz. cheddar cheese
1 lb ground turkey
3/4 cups seasoned bread crumbs
2 large eggs
1 tsp. salt
1/4 tsp ground black pepper (optional)
1/2 tsp. oregano
1/2 tsp. thyme
Directions:
1. Preheat oven to 375 degrees.
2. Sauté onion, peppers, and garlic in the oil until tender.
3. Combine sautéed vegetables with ground turkey, cheese, bread crumbs, eggs, and seasonings.
4. Place in buttered or sprayed pie pan or 8x8 pan and bake 30 min.
