Ingredients:
3 tablespoons fresh sage, chopped
2 tablespoons fresh parsley, chopped
2 tablespoons fresh oregano, chopped
1 1/4 tablespoons fresh chives, minced
1/2 teaspoon salt
1/2 teaspoon black pepper
1 1/2 lbs lean pork loin, boneless roast, trimmed
1/2 teaspoon olive oil
spray nonstick cooking spray
Directions:
1. Preheat oven to 375.
2. Combine first 6 ingredients in a small bowl.
3. Rub pork roast with oil. Rub herb mixture over all.
4. Place pork roast in a broiler pan coated with cooking spray. Insert meat thermometer into the thickest part of roast. Bake at 375 for 1 hour and 5 minutes or until thermometer registers 160. Let stand 10 minutes before slicing.
