Ww Friendly Chicken Fried Rice

I was craving fried rice, but I wanted something that was lowfat and weight watching friendly, so I came up with this. I used leftover rotisserie chicken, but any cooked chicken breast would work. I use steamfresh frozen brown rice. Doublecheck it - but approx 7 pts for the whole thing, 4 pts per serving (2 servings)
Ingredients:
1 cup of steamfresh brown rice (or other cooked rice)
1 teaspoon olive oil
1/2 cup of diced carrot
1/3 cup diced yellow onion
1/3 cup frozen peas
1/3 cup egg beaters egg substitute
1 pinch ginger
1 teaspoon of minced garlic (or to taste)
pepper
3 ounces boneless skinless cooked chicken (i used leftover rotisserie chicken breast)
1 teaspoon soy sauce (or to taste)
Directions:
1. cook up the scrambled eggbeater and set aside.
2. saute the carrots & onions until tender in a nonstick pan sprayed with cooking spray(about 5 minutes)
3. Add 1 tsp of olive oil to the pan & let it heat up a bit.
4. add the rice, peas and egg.
5. Add the diced/shredded chicken.
6. Add soy sauce to taste.
7. If you want it spicier, add a little thai chili sauce or red pepper.
