This recipe comes from the Hungry Girl cookbook. It weighs in at 4 points if you use the ingredients as listed. When I make this recipe it is 5 points due to the fiber content of the tortillas I use. It is a delicious, hearty way to break-the-fast.
Ingredients:
1 medium tortilla (110 calories with 6 grams of fiber if possible)
2 slices turkey bacon (lean and mean)
1/2 cup fat free egg substitute
1 slice fat-free american cheese
Directions:
1. Cook bacon and set aside.
2. Cook egg substitute in a spray-coated pan.
3. Heat tortilla in microwave for 10 seconds.
4. Place tortilla on plate and add slice of American process cheese.
5. Add cooked eggs and top with bacon.
6. Salsa and hot sauce are good toppers.
