Yum! This recipe for one is from the Weight Watchers Favorite Homestyle Recipes cookbook. The point count was before I replaced the peanut butter with the low fat option. I don't know if it changed the count. Increase the serving size for the whole family to enjoy it. The snow peas and tomatoes are for decoration and they are tasty with it as well. This would also be a yummy lunch to take to work. Enjoy!
Ingredients:
3 ounces boneless skinless chicken breasts
3 tablespoons plain nonfat yogurt
2 teaspoons low-fat peanut butter, creamy
1/2 teaspoon low sodium soy sauce
1/2 teaspoon rice wine vinegar
1/8 teaspoon garlic powder
1 dash ground red pepper
3 cherry tomatoes
1/4 cup snow peas, blanched (i don't blanch them)
Directions:
1. Preheat broiler. Place chicken in small broiler pan and broil 4 inches from heat until lightly browned, about 3 minutes. Turn and broil until other side is browned and chicken in cooked through. about 2 minutes longer depending on the thickness of the breast. set aside to cool. Cut into 1/2 inch diagonal slices.
2. To prepare sauce, in small bowl, whisk together remaining ingredients, except tomatoes and snow peas. and 1 teaspoon water. Pour into small serving dish.
3. To serve, fan chicken and snow peas alternately on serving plate. Add cherry tomatoes and sauce.
