Woolton Pie was created by a chef at the London Savoy during World War II. It was designed to be filling while predominantly using vegetables from the garden (which were obviously unrationed). This is the traditional wartime recipe and rather bland by modern taste. Feel free to spice it up with modern day condiments, herbs and seasonings. You can also alter the vegetables to suit your personal tastes. Enjoy, keep calm, and carry on!
Ingredients:
1 lb diced potato
1 lb cauliflower
1 lb diced carrot
1 lb diced parsnip
3 spring onions
1 teaspoon vegetable extract
1 tablespoon oatmeal
parsley
4 ounces cooked & mashed potatoes
1/2 teaspoon salt
8 ounces plain flour
3 ounces shortening
2 tablespoons baking powder
Directions:
1. FOR THE FILLING:.
2. Place all ingredients except for parsley into a large pot.
3. Add just enough water to cover.
4. Cook over medium heat, stirring occasionally to prevent vegetables sticking to pot.
5. Allow the mixture to cool.
6. Sprinkle with parsley and season to taste.
7. FOR THE CRUST:.
8. Combine salt, flour and baking powder.
9. Rub shortening into flour mixture.
10. Gently mix in potato.
11. Add a little water if desired to create desired consistency.
12. Knead
13. Roll out onto floured board.
14. Place pie filling into a deep pie dish or casserole dish.
15. Cover with Potato pastry
16. Bake in 400 F oven for 25-30 minutes or until pastry is lightly browned.
17. Serve with gravy.
