Wonderful Slow Cooker Lentils

Ingredients:
1 3/4 cups lentils, sorted and rinsed
2 large onions, chopped
2 cloves garlic, minced
1 (14 1/2 ounce) can diced tomatoes, with liquid
2 cups chicken broth
2 large carrots, sliced
1/2 cup sliced celery
1 bell pepper, diced
2 tablespoons chopped parsley
1 bay leaf
1/2 teaspoon salt
1/8 teaspoon marjoram
1/8 teaspoon sage
1/8 teaspoon thyme
fresh ground pepper
1/2 lb low-fat cheddar cheese, shredded
Directions:
1. Place all ingredients, except the cheese, in the crockpot, stir.
2. Cook on high setting for 2-1/2 hours, or until the lentils are tender.
3. Stir in the cheese until it is melted and serve.
