Less sugar,applesauce for oil,some whole wheat flour for white. The result is a cake that's moist,tender and delectable. Packed with good-for-you carrots. From Healthy Cooking
Ingredients:
3/4c sugar
3/4c packed brown sugar
3 eggs
1/2c canola oil
1/2c unsweetened apple sauce
1 tsp vanilla
11/2c flour
1/2c whole wheat flour
2tsp baking powder
1tsp salt
1tsp cinnamon
1/2tsp allspice
14tsp baking soda
3c finely shredded carrots
frosting
3oz cream cheese,softened
1tbs fat-free milk
1tsp vanilla
21/2c confectioners sugar.
Directions:
1. In large bowl,beat sugars,eggs,oil applesauce and vanilla till well blended. Combine the flours,baking powder,salt,cinnamon,allspice and baking soda;gradually beat into sugar mixture until blended. Stir in carrots and walnuts.
2. Poue into 13x9' baking pan coated with cooking spray. Bake at 350 for 40-45 mins or till a toothpick inserted near center comes out clean. Cool completely on wire rack.
3. For Frosting:,in a small bowl,beat cream cheese with milk and vanilla till fluffy. Add confectioners sugar and salt;beat till smooth. Spread over top of cake. Store in refrigerator.
