Wonder Chicken recipe from the River Mandarin restaurant in Winnipeg, MB.
Ingredients:
1 lb boneless skinless chicken thighs
1/2 cup onion
1/2 cup green pepper and red pepper
3 egg yolks
4 cups oil
2 tablespoons oil
2 tablespoons light soy sauce
1 egg white
2 tablespoons cornstarch
2 tablespoons soy sauce
2 tablespoons water
1 teaspoon sugar
1 teaspoon wine (optional)
1 teaspoon cornstarch
1/2 teaspoon sesame oil
1/4 teaspoon salt
2 tablespoons ground roasted peanuts
1 tablespoon ground roasted sesame seeds
1 teaspoon sugar
Directions:
1. Dice chicken into 1/2 inch cubes and marinate in above marinade.
2. Cut onion and peppers into little cubes.
3. Prepare peanut mixture. Set aside.
4. Add marinated chicken to lightly beaten egg yolks.
5. Heat 4 cups of oil to 350°F Deep fry chicken a few pieces at a time for about 2 minutes.
6. Heat 2 Tbsp of oil to stir-fry onion and peppers. Pour in seasoning sauce and stir until sauce thickens.
7. Return chicken to sauce and mix well.
8. Serve with grounded peanut mixture on top of chicken.
