My version of the popular mini tacos seen on appetizer menus and the frozen food section. They can be eaten as an appetizer or with beans and rice as a meal. They combine traditional 'fast food taco' taste with a few fresh twists to please both kids and adults! Read more !
Ingredients:
2lbs ground meat(beef, venison, turkey, etc)
taco seasoning of your choice(you can use the packets, if that's what you like. i used this: spice-mix.html >latin inspired spice mix and i added healthy doses of smoked paprika, mexican oregano and cayenne)
water, if needed, for the seasoning distribution
1 large bell pepper, diced
1 cup ripe olives, diced(optional)
3 green onions, sliced(or can sub 3t dry minced onion)
1lb block cojack or monterey jack cheese, shredded
1 package wonton wrappers
oil for frying
for dipping sauce
16oz sour cream
1/2 cup taco sauce(homemade or your favorite store bought)
1/4 cup favorite salsa
3-4t fresh cilantro, chopped
1t fresh lime juice(optional)
Directions:
1. Brown meat in medium, heavy skillet(I use cast iron).
2. Drain if needed.
3. Add diced bell pepper, minced onion, if using, seasonings and water, if needed, and stir to combine and heat through and thicken, if needed.
4. Set aside til cool enough to handle with hands. See Photo
5. Add green onions, olives, and cheese and mix to combine.(I use my hands :) See Photo
6. Add about 1 rounded T of filling to each wonton wrapper. See Photo
7. Fold over, sealing edges with water and pressing to close. See Photo
8. Fry in 350 oil for a couple minutes on each side, until golden brown. Make sure to keep oil at between 350-360 at all times.
9. For dipping Sauce
10. Combine all ingredients and let rest while preparing above wontons.
