A simple cake that is good warm or cold, plain or with ice cream. I got this recipe from Best of the Best from Wisconsin Cookbook .
Ingredients:
pastry crust
1 3/4 cups all-purpose flour
1 teaspoon baking powder
2 tablespoons sugar
2/3 cup butter, softened a little
1 jumbo egg
6-8 good size green apples
1/4 cup butter, softened
1 cup sugar
3 tablespoons flour
1/2 teaspoon cinnamon (i use 1 tsp, i like cinnamon)
Directions:
1. Sift first three ingredients into a bowl.
2. Cut in the 2/3 cup butter until mixture resembles corn meal.
3. Beat egg, add to flour mixture, mixing lightly.
4. Press dough in a 9 x 13 inch pan with your fingers, bringing up the sides about an inch.
5. Core and peel apples.
6. Cut into slices.
7. Arrange close together in rows on the pastry dough.
8. Cut the 1/4 cup butter into the remaining sugar, flour & cinnamon until crumbly.
9. Sprinkle the apples with the sugar topping.
10. Bake at 375 degrees for about 45 minutes.
11. This cake can be served warm or cold.
12. I love it warm and with Edy's Vanilla Bean ice cream (but that's just me).
