Winter Vegetable Soup

A warming vegetable soup, full of goodness ideal for your 5-a-day.
Ingredients:
750ml of water
2 chicken stock cubes (or vegetable cubes if vegetarian)
400g potatoes
200g carrots
1/4 a good quality cabbage
2-4 tomatoes depending on the size, skinned and chopped
salt and pepper to your taste
handful of fresh green beans
Directions:
1. Add water and stock bring to the boil
2. Add potatoes, carrots and cabbage and slow boil for 15-20 minutes until potatoes are soft.
3. Add tomatoes, green beans and salt and pepper to taste.
4. simmer until thickened.
