Winter Vegetable Soup

A wonderful blend of winter vegetables with spices.
Ingredients:
6 sweet potatoes, peeled and chopped
6 white potatoes, peeled and chopped
3 parsnips, peeled and chopped
3 rutabagas, peeled and chopped
3 onions, peeled and chopped
9 carrots, peeled and chopped
4-1/2 cups butternut squash, peeled and chopped
3-1/4 cups chicken, vegetable or beef stock, your preference
1/2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/2 tsp. ground ginger
Directions:
1. Add first 8 ingredients to soup pot. Bring to a boil, reduce heat, and simmer for 50-60 minutes, or until vegetables are soft. Purée with hand blender or in blender in batches. Stir in spices before serving
