Winter Vegetable Kielbasa Stew

Ingredients:

  • 1 (16 oz) package kielbasa
  • 1 medium onion
  • 2 cups baby carrots
  • 4 medium potatoes
  • salt and pepper
  • 1 tbsp italian seasoning
  • 1 (1 1/4 oz) package dry onion soup mix

Directions:

  1. Cut up vegetables and kielbasa and put into crock pot.
  2. Add water to cover.
  3. Add seasonings and soup mix.
  4. Cook on High 4-5 hours or until vegetables are done to desired tenderness.
  5. May need additional water throughout cooking process.
  6. This recipe may be altered in any way needed.
  7. Vegetables can be substituted as to availability.
  8. Can be prepared without kielbasa to make a vegetarian stew.
  9. Serve with good crusty bread.
