Ingredients:
2 tablespoons reduced-calorie margarine
3 medium onions, diced
1 lb 90% lean ground beef
1 garlic clove, minced
1 teaspoon table salt
1/2 teaspoon black pepper
1/2 lb frozen mixed vegetables
1 cup red wine
1/2 teaspoon dried basil
1/4 teaspoon thyme
3 cups beef broth
1 (28 ounce) can diced tomatoes
1 medium potato, peeled and diced
1 cup diced celery
1 cup diced carrot
Directions:
1. In a large soup pot, melt margarine. Saute onion until it is soft and translucent, 3-5 minutes. Add garlic and saute 1 minute until fragrant. Add beef and saute, breaking up chunks with a wooden spoon, until all the pinkness is gone. Add remaining ingredients and simmer, covered, 1 hour. Season with salt and pepper to taste.
