Winter Fruit Salad With Lemon Poppyseed Dressing

A delicious fruit salad that is as appealing to the eye as well as to the taste.
Ingredients:
1/2 cup white sugar
1/2 cup lemon juice
2 tsp onion, diced
1 tsp dijon mustard
1/2 tsp salt
2/3 cups vegetable oil
1 tbs poppy seeds
1 romain lettuce head rinsed, dried and torn into bites
4 ounces swiss cheese, shreadded
1 cup cashews
1/4 cup cranberries,dried
1 apple peeled, cored and cubed
1 pear cubed
Directions:
1. In a blender or food processor, combine sugar, lemon juice, onion, mustard and salt.
2. Process until wiel blended.
3. With machine still running add oil in a slow steady stream until mixture is thick and smooth
4. Add poppy seeds and process just a few seconds more to mix
5. In a large serving bowl combine the romaine lettuce,shredded swiss cheese, cashews, dried cranberries, cubed apple and pear.
6. Toss to mix then pour dressing over salad just before serving and toss to coat.
