Windys Sausage Gravy

This is served equally well over biscuits, cottage fried potatoes, rice or grits.
Ingredients:
1/2 lb bulk pork sausage
canola oil, as needed
1/2 cup flour
1 (12 oz) can evaporated milk
1/2 tsp poultry seasoning
salt & pepper, to taste
Directions:
1. 1. Crumble sausage into skillet and brown over medium heat, breaking apart with a spatula, until meat is no long pink. Scoot the pan off the burner, and with slotted spoon, remove meat from pan and set aside.
2. 2. Pour evaporated milk into a 1-quart measuring pitcher and dilute with enough water to make one quart total. Add enough oil, if needed, to cover bottom of pan (about a 1/2 cup total). Stir flour into pan and lightly add seasonings. When flour mixture is slightly brown, gradually stir in milk mixture.
3. 3. Reduce heat and allow to thicken, stirring occasionally to prevent scorching. Return sausage to pan and heat through. Adjust seasoning and serve.
