Wilted Spinach With Garlic

Wash the spinach in several changes of very cold water. Keep washing until all traces of sand and dirt are gone. Turn the spinach over as it cooks so cooked leaves closest to the pan are replaced with raw leaves. Read more . Be ready for the spinach to lose a great deal of volume as it cooks. Ingredients:
salt
butter
1/2 tsp. cracked black pepper
3 whole garlic cloves
2 bunches fresh spinach
1/2 bunches fresh parsley
Directions:
1. Trim the spinach leaves from the stems and discard the stems.
2. Slice the garlic into slivers as thin as a dime.
3. Heat a large saute pan over medium heat for 30 seconds.
4. Add the butter and, when half of it has melted, add the garlic..
5. Cook, stirring constantly, for about 45 seconds or until the garlic is tender and fragrant.
6. Add the spinach leaves, and season with salt and pepper.
7. Use tongs or a spatula to stir the spinach so it cooks evenly.
8. Before remove from heat add all parsley for 20 Sec when all spinach leaves have wilted.
