Wild Salmon And Avocado Salad

A beautiful Summer salad recipe that is so easy to put together. I sometimes have leftover salmon and now I have found a great way to use it in a completely different format. Enjoy!
Ingredients:
approx. 1 lb. cooked salmon (roasted, poached, etc)
1 ripe avocado, peeled and cubed
1/2 red onion, thinly sliced
2 tbsp. capers
2 tbsp. freshly squeezed lemon juice
2 tbsp. extra virgin olive oil
2 tbsp. chopped fresh herbs, such as dill, basil, parsley, tarragon and/or chives
sea salt and ground black pepper
salad greens to plate
lemon wedges for garnish
Directions:
1. Break cooked salmon into chunks in a bowl. Gently toss with remaining ingredients. Refrigerate at least 30 minutes to allow flavors to blend. Serve or salad greens. Serve with lemon wedges.
