Wild Rice With Shrimp and Cilantro |

YUM! Ingredients:
1 lb cooked peeled and deveined medium shrimp |
2 tablespoons olive oil |
1 medium onion, chopped |
1 medium red bell pepper, chopped |
1 medium green bell pepper, chopped |
3 garlic cloves, crushed |
2 cups hot water |
1 (9 ounce) package wild rice |
2 limes, juice of |
1/2 teaspoon salt |
1/4 teaspoon pepper |
Directions:
1. In a large skillet, heat oil until hot. Add the onion and peppers and cook, stirring occasionally until limp; about 5 minutes. 2. Stir in garlic, hot water and rice; mix well. Heat to boiling, stir, then reduce heat to a simmer and cook for about 15 minutes. 3. Stir in lime juice, shrimp, salt and pepper. Cook 5-10 minutes longer. |
