Wild Rice-Vegetable Medley

Ingredients:
olive oil-flavored vegetable cooking spray
2 teaspoons olive oil
1 cup chopped green pepper
3/4 cup chopped onion
3/4 cup finely chopped carrot
1 (8-ounce) package sliced fresh mushrooms
1 (2 3/4-ounce) package instant wild rice, uncooked
1 1/3 cups canned no-salt-added chicken broth
1/4 teaspoon salt
1/4 teaspoon pepper
fresh flat-leaf parsley leaves (optional)
Directions:
1. Coat a saucepan with cooking spray; add oil. Place over medium-high heat until hot. Add green pepper and next 3 ingredients; saute until carrot is tender. Add rice and broth. Bring to a boil; reduce heat. Simmer, uncovered, 5 minutes or until liquid is absorbed. Stir in salt and pepper. Let stand 5 minutes. Garnish with parsley, if desired.
