This is my Mom's Thanksgiving stuffing that my entire family loves!
Ingredients:
2 packages uncle ben's long grain and wild rice blend (original recipe 6 oz. box)
1 cup butter
2 cups chopped onions
2 cups diced celery
1 cup shredded carrot
1/2 teaspoon pepper
2 quarts toasted bread cubes (regular white bread, toasted then cut into 1 inch cubes)
1 cup turkey broth, store-bought chicken broth can also be used (from cooking the giblets)
Directions:
1. Prepare rice according to pkg. directions. Melt butter in large skillet. Add onion, celery, and carrots and simmer until vegetables are tender. Mix the rice into the onion mixture. Add the pepper. Stir well and then combine with the bread cubes, lightly. Moisten with the turkey broth to desired consistency. Makes enough to stuff a 20 -25 lb. turkey with leftovers.
