Wild Rice Soup

Great soup for a cold day. Can be made with ham or chicken. I prefer ham.
Ingredients:
2 tablespoons butter
1 tablespoon onion, minced
1/4 lb mushroom, sliced
1/2 lb diced ham or 1/2 lb chicken
1/4 cup flour
4 cups chicken broth
1/2 cup wild rice
1/2 teaspoon salt
1/3 cup grated carrot
3 tablespoons slivered almonds
1 cup half-and-half
2 tablespoons dry sherry
minced parsley or chives
Directions:
1. Combine 1/2 cup wild rice and 2 cups water and cook.
2. Drain any excess water.
3. Melt butter in sauce pan.
4. Saute onions and mushrooms until tender.
5. Blend flour, gradually add broth.
6. Cook, stirring constantly until mixture thickens slightly.
7. Stir in cooked rice and salt.
8. Add ham or chicken, carrots and almonds, simmer about 5 minute
9. Blend in half-and-half and sherry.
10. Heat to serving temperature
11. Garnish with parsley or chives.
