Wild Rice Soup

This is a very hearty soup. It contains no meat but used chicken broth. We love wild rice and this soup is very good.
Ingredients:
4 cups chicken broth
1/3 cup uncooked wild rice
1/3 cup margarine
1/2 cup celery
1/4 cup chopped green pepper
1/4 cup chopped onion
1 carrot, shredded
1 teaspoon minced garlic
1/4 cup flour
1/8 teaspoon salt
1/8 teaspoon pepper
1 tablespoon chopped pimiento
3/4 cup half-and-half
2 tablespoons dry sherry
3/4 cup shredded cheese
Directions:
1. Rinse rice in cold water and drain.
2. Combine rice and chicken broth in 2 quart saucepan.
3. Cover and cook until tender (40 to 50 minutes).
4. In another saucepan melt margarine and add celery, green pepper, onion, carrot and garlic.
5. Cook until vegetables are tender (stirring occasionally) about 10 minutes.
6. Add flour and cook another 2 minutes.
7. Add broth, rice, salt, pepper, and pimentos and cheese.
8. Bring to boil, stirring often.
9. Stir in half and half and sherry.
10. Heat through.
