Wild Rice Salad

This is my power lunch that keeps me alert whole afternoon!
Ingredients:
1 cup of wild rice
1 small broccoli
12 cherry tomatoes
6 raddish
1 bunch of cilantro
1 tbsp dijon mustard
2 tbsp olive oil
1/2 lemon juice
pinch of salt + mixed pepper
Directions:
1. 1. Cook Wild Rice – preferably in Rice Cooker.
2. 2. Set aside until cool – put in the fridge (can be made in advance)
3. 3. Cut the broccoli into florets, steam until cook- Leave to cool
4. 4. Half the cherry tomato
5. 5. Wash Raddish
6. 5. In a large bowl, mixed Mustard with Lemon Juice, followed by olive oil + salt & pepper to taste
7. 6. Stir in Wild Rice, followed by Broccoli, raddish and cherry tomato into mixture (can be stored in fridge for another 30 mins to serve chill)
8. 7. Garnish with Cilantro before serving
