Wild Rice Salad

One of my favorite salads. You can add chicken. From, How Many Potatoes in a Pound?
Ingredients:
2/3 c wild rice
1/2 c white rice
1/4 c chopped green onion
2 stalks celery, sliced thin on the diagonal
1/4 lb. snow peas, stringed and cut into 1-inch pieces
1/2 c raisins or currants
1 can (8 oz.) sliced water chestnuts, drained
3/4 c cashews, toasted
dressing
1/4 to 1/2 c mayonnaise
2 tbl. soy sauce or tamari
1 tsp. freshly grated ginger root
1 tsp. minced garlic
1 tsp. finely grated lemon rind
1 tsp. fresh grated orange rind
2 tbl. fresh lemon juice
2 tsp. fresh orange juice
2 dashes hot pepper sauce
crisp green lettuce leaves
bright orange wedges
Directions:
1. Cook wild and white rices seperately, according to package directions.
2. Cool and combine with remaining salad ingredients.
3. Whisk dressing ingredients together until smooth. Pour over salad and toss well.
4. Serve on crisp green lettuce leaves with bright orange wedges for garnish.
