Wild Rice Chicken Soup

Easy Everyday Low Carb
Ingredients:
1 (6 1/4 ounce) package quick cooking long grain and wild rice mix
2 (14 ounce) cans chicken broth
1 tablespoon fresh thyme
4 cloves garlic, minced
4 cups chopped tomatoes
1 (9 ounce) package frozen chopped cooked chicken breasts
1 cup finely chopped zucchini
1/4 teaspoon black pepper
1 tablespoon madeira wine or 1 tablespoon dry sherry
Directions:
1. Prepare rice according to the package directions, except omit the seasoning packet.
2. Meanwhile, in a Dutch oven, combine chicken broth, thyme, and garlic. Bring to boiling.
3. Stir in tomatoes, chicken, zucchini.
4. Return to boiling. Reduce heat.
5. Simmer, covered, for 5 minutes.
6. Stir in cooked rice and Madeira.
