Wild Rice and Shiitake Mushroom Pilaf |

This is one of the best recipes I have found and really full of flavor. Ingredients:
3 tablespoons olive oil |
1 onion, diced |
1/2 cup celery, diced |
1/2 cup carrot, diced |
1/2 cup pecans, chopped |
1/2 cup wild rice |
1/2 cup brown rice |
1 cup mushroom, diced |
3/4 cup beef broth |
3/4 cup chicken broth |
Directions:
1. Heat the oil in a large oven proof skillet. Add the onion, celery, and carrots. Cook until just soft. 2. Add the mushrooms, pecans, and rice. Cook for 5 minutes, stirring frequently. 3. Add the broth, stir well, cover and place in a 350 degree oven for 50-60 minutes or until rice is tender. |
