Light and healthy salad great for a ladies lunchon
Ingredients:
1 1/2 cups wild rice
1 cup barley
1 orange, zest of
1/4 cup orange juice (from the orange)
1 carrot, peeled and grated
1 1/2 cups dried cranberries
1 cup honey
1/2 cup olive oil
3/4 cup raspberry vinegar
4 green onion stems, chopped
Directions:
1. Cook wild rice and barley.
2. rinse and cool.
3. mix all ingredients.
4. chill.
