Wild Mushroom Four Cheese Mashed Potatoes

This is such a fabulous recipe. I love potatoes and am constantly making new potato dishes. I came across this one about 5 years ago at one of the estate sale collections I purchased and it is a mainstay now. Read more We can't get enough of this deligh. Hope you enjoy as much as we do.
Ingredients:
6 medium russet baking potatoes peeled and cut into chunks
3 tablespoons butter
2 cups chopped mushrooms
1/2 cup chopped green onions with some green tops
1/2 cup soft spreadable cheese with garlic and herbs
1/2 cup shredded provolone cheese
1/2 cup shredded fontina cheese
1/2 cup grated fresh asiago cheese
1/2 cup warm milk
additional shredded cheese for sprinkling on top optional
Directions:
1. Cook potatoes in large pot of boiling water until very tender then drain in colander.
2. Return potatoes to pot and mash with potato masher.
3. While potatoes are cooking heat butter in 10-inch skillet until melted.
4. Add mushrooms and onions and cook until tender about 4 minutes.
5. Stir cheeses into hot potatoes until smooth.
6. Add milk to make a creamy consistency then stir in mushroom mixture.
7. Place in serving bowl and sprinkle with additional cheese.
8. Serve immediately.
