Wholegrain Rice Salad

Here is a healthy salad, but it also comes with the flavor!!
Ingredients:
1 cup uncle ben's wholegrain brown rice
3/4 cup plain yogurt
2 tablespoons white vinegar
1 teaspoon sugar
salt and pepper
1 cup diced sweet pepper (red, green or orange, or a combination)
1/2 diced unpeeled cucumber
2 green onions, finely chopped
2 tablespoons parsley, chopped
2 tablespoons black olives, chopped
lettuce
Directions:
1. Cook rice.
2. In mesuring cup, stir together yogurt, vinegar, salt and pepper to taste. Pour over rice and gently stir in peppers, cucumbers, green onions, parsley and olives.
3. Cover and chill for at least 1 hour before serving in lettuce lined bowl.
