healthier version of an old favorite. adapted from 1001 cookie recipes
Ingredients:
2 1/2 cups whole grain wheat flour
1 1/2 teaspoons cinnamon
1/2 cup sugar substitute
1/2 cup unsweetened applesauce
2 large eggs
3/4 cup finely chopped zucchini
1/2 cup cooked mashed carrot
3/4 cup chopped apple
Directions:
1. preheat oven to 350°F spray a 9*13 pan.
2. combine flour, cinnamon, and sugar substitute.
3. in a separate bowl, combine applesauce and eggs. mix in remaining ingredients.
4. combine wet and dry ingredients and spread in prepared pan.
5. bake 15-20 minutes.
