These three loaves are 100 percent whole wheat but very soft and light. I think that it is because there are four packages of yeast in them. The bread is great toasted. It was given to me at a ladies retreat. The organist shared it with whoever wanted it. And because I love to make bread, I wanted it. Yummy and healthy too.
Ingredients:
4 cups warm water
4 (1/4 ounce) packages dry yeast
1 tablespoon salt
1 cup sunflower seeds (whole)
1/2 cup safflower oil or 1/2 cup any good vegetable oil
3/4 cup honey
9 cups approximately whole wheat flour
Directions:
1. Dissolve yeast in warm water using a whisk.
2. Add the rest of the ingredients-adding flour gradually till it forms a good kneading dough.
3. Put on floured board and knead this for about 10-15 minutes.
4. Put into a large oiled bowl.
5. Rise about 1-2 hours.
6. Punch down and rise again-about 1 hour or a little more.
7. Divide into thirds and place in three greased bread pans.
8. Rise again till doubled.
9. 325 degrees for about 60 minutes.
10. These will not be too brown on the bottom because of the lower temperature; if you want them browner, take them out of the pans and put them on a cookie sheet and bake another 8-10 minutes (I never have to do this because I like them the way they are).
