Whole Wheat, Spelt and Flax Seed Pancake

multigrain pancake with fat free yogurt
Ingredients:
2 eggs
1 cup whole wheat flour
1 cup spelt flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 3/4 cup fat free yogurt
1/8 c ground flax seed
1 tbsp extra virgin olive oil
Directions:
1. beat eggs well
2. Add all ingredients except oil and mix until moistened
3. Add oil and mix again
4. drop by 1/3 c onto hot griddle. Flip when edges beging to look dry.
5. servings: 1 pancake
6. (optional: add chopped apple or bluberries to batter with oil)
