When I first tried these I had only used whole wheat flour in breads. This is now my most requested cookie recipe. They are without a doubt my kids' favorite.
Ingredients:
1 1/2 cups sugar
1 cup butter or 1 cup margarine, softened
1 large egg, plus
1 large egg white
1 1/2 cups whole wheat flour
1 1/4 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons sugar
2 teaspoons cinnamon
Directions:
1. Cream sugar and butter until fluffy.
2. Add egg and egg white and beat until well mixed.
3. Combine dry ingredients and add to creamed mixture.
4. Beat well (dough will be stiff).
5. Combine topping ingredients.
6. Shape dough into balls slightly larger than 1 and roll in cinnamon-sugar.
7. Place 2 apart on ungreased baking sheets.
8. Bake at 400° for 8-10 minutes.
9. Cookies will puff up and flatten as they bake.
