Nice pre-marathon carb load salad
Ingredients:
200 gram penne pasta
2 cups corn
1 1/2 cup broccoli
1 tomato
2 tbsp pesto
184 gram tuna ( 1 can)
2 tbsp olive oil
1 tbsp white wine vinegar
1 salt
1 pepper
1 tspn dijon mustard
Directions:
1. Boil penne pasta as per instructions
2. Steam Broccoli and Corn
3. Core and dice tomatoes
4. Combine all ingredients and add 1 can of tuna
5. Dressing
6. Comibine Oil, Vinegar, Salt, Pepper and Mustard, blend until smooth
7. Dress salad with Dressing
