this is an adaptation of the recipe by cherber. i didnt have all the ingredients of the other, and i wanted to sweeten up the mix. as with most whole wheat things, these are heavier muffins than usual, but they are very filling, so that's a plus. these are very heart healthy, so if you're looking for something that's good for the kids and tastes good too, these are perfect.
Ingredients:
1 1/2 cups whole wheat flour
1/2 cup flax seed meal
1/2 cup quick oats
1 teaspoon baking soda
3 eggs
1 1/4 cups milk
4 tablespoons honey (i use blue agave plant extract instead, but this isn't very easy to find)
1 banana (mashed)
3 apples (peeled, cored, and thinly sliced)
1 cup raisins
2 tablespoons cinnamon
1 teaspoon nutmeg
1 tablespoon vanilla extract
Directions:
1. preheat oven to 400 degrees.
2. mix all ingredients.
3. pour into greased muffin tins filling almost full (do not use baking cups because the batter will stick to the paper once it's cooked)
4. bake for 12 minutes or until done in the center.
