Whole-wheat crostini with white beans

Ingredients:
15 ounce(s) canned white beans, rinsed and drained
1 teaspoon(s) dried rosemary
1/4 cup(s) fresh parsley, chopped
1/2 cup(s) low-sodium chicken broth
2 tablespoon(s) olive oil
1/2 cup(s) onion, chopped
1/4 cup(s) pine nuts, toasted
2 plum tomatoes, cut into 8 slices
salt and ground pepper
8 slice(s) whole-wheat baguette, toasted
zest of 1 lemon
Directions:
1. Combine olive oil and onion in medium skillet. Saute over medium heat for about 5 minutes or until tender.
2. Add rosemary, broth, and beans to onions. Simmer gently for 5 minutes or until broth is reduced and thickened. Remove from heat and season to taste with salt and pepper.
3. Fold in parsley and lemon zest. Top each baguette slice with a tomato slice and 2 tablespoonsful of bean mixture. Garnish with pine nuts.
