High Fiber corn bread
Ingredients:
1 1/2 cups of whole wheat flour
3/4 cups of cornmeal
3 tablespoons of canola oil
1 egg
1 cup of skim milk
1/2 teaspoon of salt
2 teaspoons of baking powder
1 teaspoon of baking soda
1 teaspoon of sugar
Directions:
1. Mix flour, cornmeal, salt, baking powder, soda and sugar in a bowl. Make a well and add the egg - beaten and the skim milk.
2. Heat the oil in a cast iron skillet until hot, sprinkle some cornmeal in the bottom and pour hot oil into the bread mixture. Stir and pour mixture into skillet.
3. Bake at 375 degrees for 20 - 30 minutes or until the surface is browned and a knife when inserted comes out clear.
