This is just a basic corn bread recipe with a few healthy modifications.
Ingredients:
1 cup cornmeal
1 cup whole wheat flour
1 tablespoon sugar
1 teaspoon salt
1 tablespoon baking powder
1 1/4 cups milk
2 eggs
2 tablespoons vegetable oil
Directions:
1. Mix dry ingredients in a medium bowl.
2. Mix wet ingredients in a small bowl.
3. Add wet ingredients to the dry and mix just until smooth.
4. Bake at 425 for 12-15 minutes.
5. Use an 8x8 square pan or 12 muffin tins.
