Whole Wheat Biscuits

This is a light, delicious biscuit using white whole wheat flour which you can usually find at a health food store or co-op. It mixes up quickly and is best eaten right out of the oven.
Ingredients:
2 cups soft white whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 large egg, plus enough yogurt to make 2/3 cup
1/3 cup melted butter or 1/3 cup oil
Directions:
1. Sift the dry ingredients into a bowl.
2. Make a well in the center.
3. Pour the combined beaten egg and yogurt into the well, along with the melted butter or oil.
4. Stir until minimally combined.
5. Turn out the dough on a floured surface, and knead briefly until it is uniform and smooth.
6. The dough should be soft and moist.
7. Roll or pat the dough until it is about 1/3 thick.
8. Cut into your favorite shapes.
9. Place on a lightly greased cookie sheet and bake in a preheated 450 degree F oven for about 10 minutes.
10. For variation, you can add herbs, cheese, spices or sugar to the dough to create your own special biscuits.
