This is a quick and easy way to have breakfast on the go or a no guilt snack. They are packed with bran and whole wheat goodness and the bananas give them a yummy sweetness. Ingredients:
1 1/2 cups wheat bran
1 cup non fat milk
1/2 cup unsweetened applesauce
1 egg
1/4 cup of honey
1/2 tsp vanilla extract
1 cup whole wheat flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 sliced banana
1/4 cup chopped pecans (or any nuts you like)
*substitute 1 cup of thawed or fresh blueberries instead of banana/nuts to switch it up
Directions:
1. Preheat oven to 375F (190 C)
2. Spray muffin pan with non-stick spray. (muffin liners are NOT recommended. Half of the muffin gets stuck to the paper)
3. Mix together wheat bran and milk and let stand for 10 minutes.
4. In a large bowl, mix together applesauce, egg, honey and vanilla.
5. Beat in bran mixture.
6. Sift together flour, baking soda, baking powder and salt.
7. Stir into bran mixture until just blended.
8. Fold in bananas and nuts.
9. Scoop into muffin tin.
10. Bake in preheated oven for 15-20 minutes or until tops spring back when touched.
