Whole Wheat Banana Nut Muffins

These muffins are packed with food that is good for you - no oil. I omitted the oil and replaced it with flax seed and plum puree.
Ingredients:
1 1/2 cups whole wheat flour
3/4 cup brown sugar
1/4 cup flax seed meal
1/2 teaspoon salt
1 teaspoon baking soda
3/4 teaspoon cinnamon
3 -5 bananas (very ripe)
1/4 cup buttermilk
2 eggs
2 teaspoons vanilla
1/4 cup plum puree or 1/2 cup applesauce
1 cup pecans, chopped
Directions:
1. Peel the bananas and add to mixer - turned on medium speed. Begin adding wet ingredients.
2. In another bowl place all dry ingredients and stir together. Slowly begin adding to mixture in bowl. Once this is all mixed together spoon into greased muffin pans 3/4 of the way up.
3. Bake at 350 degrees for 20 minutes.
