From the American Diabetes Association. whole-wheat flour, all-purpose flour, baking soda, ground cinnamon, ground cloves, sugar, artificial sweetener, oil, egg white, apple, walnuts cvt
Ingredients:
1/2 cup whole-wheat flour
1/2 cup all-purpose flour
1/2 tsp baking soda
1/2 tsp ground cinnamon
1/4 tsp ground cloves
1/4 cup sugar
1 g (1 packet) splenda
2 tbsp vegetable oil
1 egg white
1 cup apple, finely chopped
1/3 cup walnuts, finely chopped
Directions:
1. Sift flour, soda, and spices together.
2. Stir in sugar, artificial sweetener, oil and egg.
3. Fold in apple and nuts.
4. Baking Method: Drop the rounded teaspoonfuls onto a cookie sheet sprayed with nonstick cooking spray. Bake at 375 degrees F for 10 minutes or until lightly browned.
5. Microwave Method: Arrange 8 cookies in a circle on microwave safe pan. (You can turn a casserole upside down.) Cook on High for 2 minutes. Serve warm.
